Meet resident Barbara Preble
Barbara Preble and her husband Ed moved into Prairie City Landing in November 2023. Arriving from Mesa, Arizona, the Prebles soon found themselves right at home – whether it was participating in the activities, enjoying the fitness opportunities or the creative masterpieces the chef prepares for every meal.
“I love the food here,” Barbara said during a recent interview. “And I love the presentation. It’s like eating at a fine dining restaurant. In fact, it’s so beautiful that it often blows me away. I almost hate to eat it.”
There are so many choices for the residents to consider that it can make it challenging to narrow down your favorites. But Barbara gives it a try.
Her first choice? “That would be the Lemongrass Prawns. The sauce is so yummy,” she said. “But then, there’s also the Lemon Thyme Chicken Breasts with orzo and purple cauliflower. It’s outstanding.”
And the favorites keep coming. “My husband and I both love sweet potatoes and one meal we look forward to is the Farmhouse Pork, served over a bed of sweet potatoes and a side of beets. It’s so beautiful and delicious,” Barbara said. As a non-red meat eater, she also loves the Swedish meatballs made with ground turkey and the chicken salad wrap.
“The flavors of all the food are amazing. It’s so wonderful that they’ve gotten rid of the saltshaker in the kitchen because now they use different seasonings, herbs and spices to bring out the different flavors of the food,” said Barbara.
